Inspired by the Green Sauce at Sophie’s Cuban Cuisine in NYC, this sauce is a modified Peruvian Aji with a delicious kick!

Ingredients1

Ingredient Quantity
Avocado 1 Large
Scallions 6
Jalapeño Peppers 3 (Keep Seeds)
Plum Tomatoes 2 (Remove Seeds)
Garlic Cloves 8
Lemon 1 (Juice)
Lime 1 (Juice)
Olive Oil 3 Tablespoons
Salt To Taste
Black Pepper To Taste

Instructions

  1. Roughly chop all ingredients & blend in food processor. 2

  2. We found that our most recent batch was heavy on the lemon/lime acid, so we added some sugar to cut the acidity.
