A vegetarian alternative to Clam Dip

| American Cheese | Slices to Cover the Top |
Instructions
- Simmer chopped artichokes with canned liquid and lemon juice in small pan for 5-10 minutes.
- In medium frying pan, melt butter and sauté remaining ingredients except bread crumbs and cheese for 5-10 minutes or until vegetables are tender.
- Remove both pans from heat and combine with lemon juice with vegetables and bread crumbs.
- Place mixture in small baking dish, top with cheese, and bake at 350°F (175°C) for 12 minutes or microwave until dip is hot and cheese is melted.
Serve hot with crackers.
